NOTES AND TIPS:
- When deep frying, add carrot to the oil as you heat it up. This keeps the oil nice and clear.
- A great way to heat up leftover cooked pasta is to place it in a sieve over the sink and pour over boiling water, then shake off any excess water.
- When choosing an aubergine go for the light, smooth ones, without any blemishes, as these have fewer seeds and are not bitter.
- When buying cucumbers and courgettes always choose small, firm ones. These have the best taste and texture.
