Chimichurri
Recipe by @michi_blog , Michal Levy Alhalel , a wonderful condiment that goes perfectly with, bbq meats, chicken, tofu and cheese.

Ingredients:
1 large bunch of coriander (about 200g)
1/3 cup sunflower oil (or any other oil you like)
2 garlic cloves
1/2 red onion, peeled and roughly chopped
1/2 red hot chilli , sliced
1/4 tsp chilli flakes
1/2 red bell pepper, cubed
2 tbsp vinegar
1 tsp sugar
Salt and pepper

Method:
Place all ingredients in a food processor, and bland using the pulse button until chopped .
Keep refrigerated.

Best Gluten-free Banana cake I’ve ever made. If you’re vegan, you can omit the egg. Recipe:

Preheat oven to 180c (not turbo)
Oil and line a loaf baking dish

3 large ripe bananas, mushed with a fork
1/4 cup coconut oil, melted
2/3 almond milk
1 egg
1 tsp vanilla extract
1/3 cup brown sugar
2 tbsp maple syrup
11/2 cup gluten free flour (I used: 3/4 cup gluten free flour, 1/2 cup rolled oats and 1/3 cup flaxseed powder)
11/2 tsp baking powder
1/2 tsp Bicarbonate soda
1/3 cup chopped pecans or walnuts

For the topping:
1 banana , sliced
1/4 cup chopped pecans or walnuts
1 tsp cinnamon
2 tbsp brown sugar
1/4 cup chocolate chips (optional)

Method:
In a bowl, using a hand whisk, mix well all the cake ingredients apart from the nuts. Then add the pecans and mix.

Transfer the mixture into the baking dish. Spread the topping ingredients evenly.

Bake for 50 min.
Let it cool completely before slicing.

To everyone’s request I’m posting the Romanian kebabs recipe today. very easy to make. It is juicy and has a wonderful garlicky flavour. No use of onions or parsley, only a few ingredients.

Original Romanian Kebabs

1 kg minced rib steak (I use 700g minced lamb chops and 300g minced steak)

1 tsp bicarbonate soda dissolved in 1/2 cup water
1/2 tsp ground cumin
1 tbsp dried Savory spices or dried thyme
5 garlic cloves, crushed
Salt
Ground black pepper

Mix well all the ingredients. Cover and let it rest in the fridge for 4 hours or overnight.

Take out the mixture from the fridge. With oiled hands, shape into 11/2 inch and 8-9 inch long kebabs (like small cylinders).

To cook the kebabs, heat a large hon-stick skillet on a medium or medium-high heat.

Add enough oil to coat the bottom of the pan. When the oil is hot, place the kebabs on the pan, making sure not to crowd them.

Use tongs to turn the kebabs frequently, making sure all sides are browned evenly. Then transfer to a large plate. Serve immediately.

The Romanian, serve it with a special garlic paste. I like to serve it with pita bread, tahini and salad.

The perfect Australian Pavlova. Recipe:
Preheat oven to 120C. Line a baking dish with baking paper.

4 egg whites (room temperature)
1 cup sugar

1 tbsp vinegar or lemon juice
1 tbsp vanilla essence
1 level tbsp cornflour

In a standing mixer whisk on medium speed the egg whites and gradually add the sugar, when the meringue forms a soft peak, add the vinegar and vanilla. Continue whisking on high speed, until it forms stiff peak and looks glossy. Fold in the cornflour.

Shape the pavlova mixture on the baking paper and bake for 90min. Turn off the heat and leave in the oven to cool for 45 min.

Let it cool completely before filling with whipping cream and strawberries.

Classic Potato Latke . It’s the last day of Hanukkah today so let’s make these perfect classic latke and my heavenly doughnuts (previous post). Happy Hanukkah! Recipe:
Yields 12 Latke

1 kg potatoes, peeled (about 5 potatoes)
2 eggs
2 tbsp potato flour
1 level tsp salt
Black pepper
1-2 tsp sugar

Oil for frying
1 cube of butter - 20g

Method: Finely grate half of the potatoes and coarsely grate the remaining potatoes, squeeze dry. Add the remaining ingredients and mix well.

Heat 1cm depth oil in a frying pan on a medium heat.

shape the Latke with your hands and fry in batches. while frying add a cube of butter to the oil. Fry on both sides till golden brown.

Serve with sour cream mix with 1/3 tsp onion powder and 1/2 tsp vegetable soup mix
Sweet option: serve with apple sauce.

yields about 25 doughnuts.

Dry ingredients:
350g self raising flour
1/2 cup sugar
1 tbsp vanilla sugar

Wet ingredients:
2 large eggs
400g sour cream
2 tbsp brandy (I used slivoviice’s plum liquor)
1 tsp vanilla extract

1 litre oil for frying

In a bowl mix the dry ingredients.
In a separate bowl, using a hand whisk, mix well the wet ingredients.

Add the wet ingredients to the dry ingredients and mix well to get a smooth mixture. Cover with clingfilm and let it rest for 15 min.

In a dip frying pan, hit the oil to 170c. Keep it on a medium-low heat, then, using a small Ice cream scoop with trigger or two spoons, fry in batches, until golden brown on both sides. Make sure to keep the heat on 170c or on a low heat.
Remove the fried doughnuts to a rack and immediately dust with icing sugar (confectioners sugar)
Serve the doughnuts with jam.

Preheat oven to 175c turbo
Line 2 oven trays with baking sheet

2/3 cup melted coconut oil
1/2 cup white sugar
1/2 cup soft dark brown sugar
1 larg egg
2 tbsp water
1 tbsp vanilla extract

Dry ingredients:
1/2 cup plain flour (I used 1/4 flour and 1/4 oats flour)
2 cups jambo oats
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground allspice
3/4 cup ground almonds
*1/3 cup chocolate chips - optional

Method:
In a bowl: mix coconut oil and sugars, add egg, water and vanilla ,mix well to combine.

In another bowl, mix all the dry ingredients.
Add the dry ingredients mix into the first bowl and mix well to combine.

Using an ice cream scoop, scoop out 18 (dome shape) dough balls and place them onto the baking sheets spaced well apart. Slightly flatten the top of each dough ball.

Bake for 13-15 minutes. Let it cool completely then store in an airtight container.

100g melted butter
1 pack filo pastry defrost

For the sugar syrup:
11/2 cups sugar
11/4 cups water
Juice from 1/2 a lemon
1 tbsp orange blossom water

Ground or chopped pistachios

Method:
Make the sugar syrup:
Place the sugar, water and lemon juice in a small saucepan. Bring to a boil and cook for five minutes. Add orange blossom water and mix.

Preheat oven to 200c

Butter a muffin tray .
Slice the rolled filo pastry into 2-3 cm slices
Place each rolled filo slices in the muffin tray holes.
Brush each pastry slice with melted butter, about 1-2 tablespoons each.

Bake until golden brown. Remove from the oven and using a spoon gently spoon the syrup over the hot baklava. Top with pistachios.

This is the best Homemade gluten-free, thin and crispy Crackers that you can’t stop eating! So easy to make. You can keep in the freezer to have a healthy snack available for you anytime you need. Recipe:

Homemade crackers : (yields about 5 oven trays)
Preheat oven to 175C

1 cup gluten-free flour. (If you don’t have gluten free use spelt flour instead)
1 cup whole oats
1 3/4 cups /250g mix seeds (sunflower, pumpkin, flaxseeds, sesame)
1 1/2,cups mineral water

Mix and let the mixture rest for 5-10 to absorb the water.

Then add:
1/4 cup olive oil
1-2 garlic cloves, crushed
1-2 tbsp Za’atar powder
1 tsp salt
1/2 tsp black pepper

Mix all and let it rest again for 20 min.

Place 2-3 tbsp of the mixture on an oiled baking paper (I used olive oil spray), cover with another oiled paper and using your hands or a rolling pin, flatten the mixture to 1 mm .
Carefully remove the upper paper and place the lower baking paper on the baking tray. Bake for 20 min until golden. Repeat this with the rest of the mixture.

Let it cool completely, then break it into pieces and keep in an airtight container or in the freezer.

The perfect cake for Shabbat. A recipe from @guy.shukrun : Cottage cheesecake -only 5 ingredients , low fat, flourless, fluffy and light. - by far it’s the best cheesecake I’ve ever had!

Ingredients:
4 pack low fat (5%) cottage cheese (250g each)
4 eggs, separated
1 cup ** sugar or sweetener
2 tbsp cornflour
1 tbsp vanilla essence (or 2 vanilla sugar)

** (the original recipe calls for 3/4 cup sugar or sweetener)

Preheat oven to 190C (not turbo)
Grease 23-24cm round springform cake tin with oil or butter.
Line the bottom of the cake tin with baking paper. Plus use a strip of baking parchment about 5cm or a few inches higher than the tin, and attach it around the side of the tin, pressing the paper so it would stick to the oil/butter

Method:
Placed a cottage cheese in a food processor, or , using a strong hand blender, and puree until smooth, stopping to scrape down the bowl once or twice.
Place the smooth cottage in a large bowl. Add the, egg yolks, 1/2 cup sugar, vanilla essence and cornflour. Using a hand whisk, mix well until smooth.

In a stand mixer bowl, whisk the egg whites with the remaining sugar (1/2 cup) until stiff.

Fold the egg whites into the cheese mixture.
Transfer the cake mixture into the lined baking tin. Bake for 50min or an hour, then turn off the oven and leave the cake for another 15 min. Now leave the oven door ajar and let the cake cool down for another 30-40.

Take out the cake and let it cool completely.
Keep in the fridge.

(Using a hand whisk): in a bowl whisk together:
250g honey
3 eggs
1 tbsp water
3/4 cup sugar (I like to use 1/2 cup white sugar and 1/4 cup soft dark sugar)

In another bowl mix together;
3 cups plain flour
1 tsp bicarbonate soda
Half a lemon zest
1 tsp ground allspice
1/4 tsp ground cloves
1 tsp cinnamon
1/4 tsp ground ginger

Add the egg mixture (first bowl) to the flour mixture (second bowl), and mix well . You’ll get a sticky dough.
Cover with cling film and cool in the fridge for 3 hours.

Preheat oven to 160 C (not turbo)
Line 2-3 oven trays with baking sheets

Form the cookie dough into small balls (no more than a flat tsp each , as they triple their size) and place them space well apart onto the baking sheet. Make sure not to flatten them!
Bake for no more than 15 minutes!
Take out from the oven and brush with the sugar glaze.

For the sugar glaze;
200g icing sugar (confectionery sugar)
2-3 tbsp water
Juice from half a lemon or 2 tbsp brandy

Mix the glaze ingredients into a yogurt consistency. Gentilly brush the cookies while they still warm. (I like to brush twice)

Leave the cookies out to cool for an hour then keep in an airtight container.
The cookies freeze well!
